Day three: Asador Etxebarri 90 minutes south — Victor Arguinzoniz's wood-fire temple, considered the world's #1 by some (the txuleta is the religion). Sleep at Hotel Akelarre (attached to the restaurant, cliff-edge) or La Perla Boutique (Playa de la Concha beachfront). Bilbao (BIO) is the gateway, 90 minutes west.

Asador Etxebarri — worth the drive?

Yes. 90 minutes south of San Sebastián in the Basque countryside. Lunch is the move — drive over, eat 4 hours, drive back. Booking 2-3 months ahead via website.
