Tabasco Factory tour on Avery Island (the McIlhenny family's salt-dome island in the marsh) is a self-guided 10-stop walk through the pepper mash barrel room, the bottling line, the family museum. Free, but the factory store is the actual move — sauces and limited-edition releases you can't find anywhere else. Day two: an Atchafalaya Swamp tour with Cajun Country Swamp Tours out of Henderson — flat-bottom boat through the cypress, gators, herons, the works. Sleep at the Frederick Hotel in downtown New Iberia (1937 historic, restored 2018) and dine at Bon Creole Lunch Counter (boudin balls, étouffée, the genuine bayou stop). Lafayette (LFT) is the regional fly, 25 minutes north.
